And the hit of the night was my Pink Lemonade Cookies!
Here's the recipe:
1 cup butter, softened
3/4 cup sugar, plus additional for rolling
3/4 cup powdered lemonade mix (I used pink lemonade!)
1 egg
1 teaspoon vanilla
1/2 teaspoon lemon extract
1 lemon, juice of (I cheated and used the stuff in the plastic lemon!)
lemon zest (I didn't have any)
2 3/4 cups flour
1 teaspoon baking soda
Preheat oven to 350°.
Cream butter, sugar, and lemonade mix.
Add egg, vanilla extract, lemon extract, lemon juice, and lemon zest and mix well.
Add flour and baking soda and mix.
I used a medium cookie scoop- roll dough into balls and roll in sugar, place on cookie sheet.
Bake for 10-12 minutes. I baked mine for 10, until they were just set and golden on the bottom, then left them on the cookie sheets for about 2 minutes before moving them to a cooling rack.
Makes 36 cookies.
Recipe from Country Time Lemonade
I bought a big canister of pink lemonade mix for John so he could take some in the truck and mix it whenever he wanted. There was a lot left, so I Googled "lemonade mix recipes" and found this one. They are so soft, mostly sweet but with a little tangy from the lemon flavors. I need buy a lemon and make them again with the juice and zest from it!
